The green and glowing vegetarian warm salad tasted every bit as amazing as it looked! With sautéed kale, broccolini, asparagus, peas and warm roasted pumpkin, the salad was nutritious and hearty, especially as it was topped with 2 soft poached eggs and a deliciously sweet and tangy beetroot labneh that marbled through the dish and contrasted perfectly with the warmness of the veggies. And who could forget the creamy avocado chunks hiding in the corner? Everything tastes better with a little avocado – they’re the ultimate breakfast fruit that add a creamy, soft touch.
